American Supermarket Ramen Challenge: Shoyu Ramen with Easy to Find Ingredients (Easy Recipe)
This video was inspired by one of my ramen mentors Takerou Kanda who was recently on Japanese TV demoing how to make an easy shoyu ramen at home. I took his recipe and created my own challenge of only using ingredients I could get at a standard American supermarket and the results were kind of surprisingly good! I only allowed myself 1 item from the Asian aisle (you can probably guess from the title what that was) and everything else should be easily available everywhere. On top of that, this bowl of ramen only took 1 hour to make from start to finish ( not counting noodles and toppings), if you're ramen beginner, definitely give this one a shot as its pretty easy and tastes pretty good!

Ingredients:
Soup (2-3 Servings)
1L water + 1 cup
1 can of Sardines packed in Olive Oil
150g of Ground Pork
150g of Ground Chicken
Green Onion
3 small slices of. Ginger
Aroma Oil
Oil from Sardine Can
Olive Oil
Green onions
ginger
Makeshift Tare (1 serving)
1Tbsp Japanese Soy Sauce (check ingredients for Water, Soybeans, wheat and salt)
1/4tsp Brown Sugar
1/4tsp Corse Sea Salt or Kosher Salt
pinch of MSG
1Tbsp Aroma Oil
Chopping green onions
tiny pinch of White pepper (optional)

How to Make Chiyu (Chicken Fat) for Ramen in the Microwave

This is a very easy way to render out fat from chicken skin using a microwave. In ramen terminology, this is called, "Chiyu" and its a very popular base for aroma oils.     Thanks for the video. I was able to make my first ramen noodles from scratch. It was difficult where on my first attempt I tried to force the dough into the thinnest setting by accident and the dough just crumbled through. The 2nd attempt was successful and definitely tastes better than store bought noodles.

    Correct me if I’m wrong but 500 grams of flour and 165 grams of water would total 665, making your noodles closer to 25% hydration not 33%. This is always how I calculated hydration.

    If you dont have lard around, because who does these days, just cut a tab of butter! put it in the bottom of the bowl and when you pour the hot soup over it melts and mixes in just the same as the lard in the video, really nice layer of texture and flavor for the winter time ramen.

    can you explain what the taste of the Maruchan instant Ramen cups nood flavor? it is by far the best tasting noodle and I can't explain why. do you have an idea of why it is such a good noodle?

    My daughter is extremely sensitive to Monosodium Glutamate (it gives her tachycardia). Can you recommend a delicious substitute/alternative to MSG??😊🙏

      Nobody has ever been able to prove sensitivity to MSG so she'd be the first in history.. if able to actually prove it. The reason for this is simple once you understand what MSG is. This is the point that makes many scientists laugh because monosodium glutamate is simply the sodium salt of glutamic acid, which is one of the 22 amino acids that are the building blocks of every protein in every single organism on our planet. Your daughter, just like everyone else, consumes glutamic acid daily since not only is it a constituent part of every protein (some grain proteins actually have over 30% by weight of glutamic acid!) found on the planet but it's also found in everything from tomatoes to seaweed to parmesan cheese. Interestingly even if someone was able to actually avoid MSG/glutamate in their food (which is pretty much impossible for a single day never mind a lifetime), their bodies would produce all the glutamate it needs because, as humans, we definitely need glutamate to survive.
